A good practice for diabetes sufferers is to prepare the kefir with a little less sugar and ferment it longer than usual (up to 5 days). In the process, the kefir becomes drier and drier in taste and in the end is no longer sweet at all. If that tastes too strong, you can drink your kefir mixed with water or tea.
