You have 3 options, depending on how long you want the break to be.
- Shorter break: Prepare the kefir as usual with sugar and water and simply let it stand. This method is suitable for absences of up to one week. After that, you will have very sour and bitter water kefir. Then simply tip it out and start again.
- Longer break: Put the crystals together with some water and sugar in a container and store in the refrigerator, for example in the preparation jar. This works for up to 3 weeks. After that, the kefir often needs one or two attempts to ferment optimally again.
- Kefir babysitter: the best solution for very long absences is to hand over the culture to a "babysitter".
